Hot, sharp, and fast, I spent 10 yrs in restaurants in the back of the house; first as a cook, then as a sous-chef. Ohmyoh, the stories I heard from the servers! The drunk, rude customer and the clumsy server; "Oooops! I know that coffee's hot. Let me get a towel." Or, the 'high earner' waitress who's blouse is always open just a bit too much so when she leans forward to serve, her 'assests' are well displayed. She typically earned more in tips in one night than I did in a week. Ahhhhh, the memories you've revived.
