I've never had a bad experience at Quarters, and it's just a lot of fun, especially when you're with a group.

I guess if you don't drink, looking at purely the food alone, there is likely a better value or quality in some other places - I'm sure.  Or, if you get very picky about absolute top-quality meats (which you pay up) and / or variety of banchan, places like Genwa - even though some could argue as "inauthentic" - are hard to be beat.  Expensive sure, but you're not left stuck drinking Hite (nothing against it if you're a beer drinker) and you have great food, service, and ambiance (although much more chill).

The reason why we usually pass on Parks, et al is the ho-hum ambiance those places typically have... lots of fluorescent lights, (often) poor ventilation, inconsistent service, cooking, and quality.  Plus, if you want to go out afterwards in many of those other spots, it's a hike or an Uber to get to the action...  I can walk right out of Quarters and have a killer cocktail at Normandy, and head off to a myriad of other spots for a fun night out.

Again, definitely not claiming to be an authority on all things KBBQ in LA, but for a one-shot experience, it's hard to beat Quarters in my book.

Dorsia being an example where people pay a premium just to get into the restaurant. This shows restaurants are willing to experiment with different monetized access, I think a pricing curve is a good solution to avoid the issue of setting an initial price, trying to figure out what supply makes sense, and any psychological buyer/seller issues with not selling out. I think it would be important to ensure that restaurants are protected from the downside. I remember reading about the SHŌ Restaurant in SF and their ultimate demise. It appears that you’re more focused on augmenting existing restaurants which I firmly believe is a better approach.

Ultimately the use case for such technology provides immense opportunities. I currently live on the same block as my favorite restaurant - I’d buy their NFT in a heartbeat and will remain an avid supporter. For all the Berkeley folks reading this - imagine owning a Top Dog NFT that lets you get access to hotdogs faster at 2am by bypassing that line…

Building on what Frank said, building revenue in a loyalty program is not new. Airlines are notorious for having thin (often times negative) margin yet the loyalty membership component remains a cash cow. It would be amazing to see this mechanism adopted for restaurants.

It will quickly get too expensive as people try to game the system to reap financial rewards because they don't actually care about the restaurant. In a perfect world it would be a great idea. Zora V1 tried stuff like this. 
Something that could work is perhaps setting up an approval system for people that will be allowed to participate. In that scenario you can avoid bot and annoying financial games.

How hepatitis B was defeated in 3.5 months is asymptomatic.  As I found out, I did 3 tests for AIDS hepatitis. The first analysis before hospitalization in mid-November 2021 was negative, the second analysis before hospitalization to another hospital in early February 2022 found antibodies to hepatitis B, the third analysis at will was negative in early March 2022. I did the tests in a respected laboratory where all polyclinics and hospitals of the city of Almetyevsk do a similar analysis in the laboratory at the polyclinic speedcenter. “My New Jersey friend, who knew I was driving to Los Angeles, asked that if I should run into the actor Randolph Scott, would I please tell him that her mother sends her regards. Of course I was going to run into Randolph Scott – doesn’t everyone when they’re in LA?
One of the Hollywood’s legendary restaurants I had been to in 1955 with my mother and wanted to eat at again, was Romanoff’s. I made a reservation.  [The year was 1957.] 
When I arrived, alone, Prince Michael [Mike] Romanoff greeted me, and led me to a center table facing the entry.
I had been to expensive restaurants before, but I felt overwhelmed by the attention paid to me by the staff. I was getting star treatment. Looking around the room, I spotted Randolph Scott at a table with two women and a man. I really was beside myself when I saw him; I never imagined it actually would occur. Flustered about how to handle the situation, and by my lack of something to scribble a note on, I asked a waiter for a piece of paper. My note to Randolph Scott contained the woman’s name, and a short explanation that if I should see him, she wished me to convey her regards. I sent for a waiter when I saw that the Scott’s table only had drinks on it. I didn’t sense that I was interrupting their dinner when I asked for the note to be delivered. The waiter returned; Mr. Scott asked me to his table. I went, and made my introduction. He stood; introduced me to his wife and the other couple, and then he fondly recalled dating my friend’s mother during their college days. The whole encounter couldn’t have lasted more than a couple of minutes. I returned to my table. When the four of them were leaving, they passed by my table, and stopped to say goodnight. The attention I received from the staff after my exchange with Randolph Scott increased to a crescendo. I could literally hear the drum rolls when I departed Romanoff’s.
In 1955, when my mother and I visited Los Angeles, I suggested we have dinner at Romanoff’s. The possibility of sighting celebrities intrigued her. Although I was only twenty years old, undoubtedly my champagne taste was inherited from Mom who enjoyed indulging herself… and me. She was an attractive forty-eight year old woman, and wore stylish clothes. Upon our arrival, Prince Romanoff greeted us like long lost relatives; treating my mother like a Hollywood star. Mom loved every minute we were there, but when she paid the bill, I wondered – because I bore little resemblance to her – if they thought I was her kept boy!”

From the user perspective you can incentivize early adopters, provide a way for loyal users to invest in the growing success of a restaurant, and get insider benefits, but from a restaurant perspective, there's a fair amount of risk to consider. 

Restaurants are already riding on thin-margins, the additional overhead of understanding these curves and managing the downside risk of speculation and dumps could be over the heads of most dining entities. When things are going well, they go well until they don't. Perhaps this is a new role in this crazy world (digital revenue mgmt).

Maybe approaching it from the restaurant's north star could inform the outcome better. Does this technology fundamentally allow restaurants to better serve their patrons and fans? Just like how you guys kicked off with Gertrude, we can only know better with experimentation. (287 words)

I recently had a lunchtime meal in France at a small, traditional Lyonnaise bouchon.

After being seated, we noticed a table of two talking to who I assumed to be the owner-chef of the restaurant. Based on the intensity of the interaction - the way they were leaned in, pencil and paper in hand, and gestures - the conversation appeared to be about serious restaurant matters. I didn't think much of it beyond that.

Five minutes later, the owner walked over and engaged us in the same manner as he did the previous table. He wanted to chat, talk about where we were from, why we found ourselves in Lyon, and to review the "menu du jour" in full, unfettered detail. He went through what was in season, his most prized dishes, and gave recommendations based on our preferences.

Right then, it clicked for me - he was the menu. They didn't just leave you with a piece of paper, lost in translation. A real human, the owner no less, came by to personally discuss the food.

As we enjoyed our lunch, I noticed there were zero turns at lunch service. I surmise that this level of engagement with your fellow diners takes purposeful attention, and the tradeoff means lower table turnover. Hopefully, quality and loyalty makes up for any possible profit deficiencies, but even if not, their humanistic bent towards hospitality sets them apart.

This unexpected, uncommon service shook up my traditional definition of hospitality. Because of that, it was by far one of my most treasured restaurant visits in the country of France. (277 words)

Gertrude's selling 60k in memberships with no ability or promise to resell is a nice proof of concept for customer demand.  People love their local restaurants and value status when they go there.  How to best reward and incentivize these people is an interesting question. (204 words)

A few musings: what’s the deal with gastropub hamburgers? I feel like as a man you have to work up a powerful hunger to deserve a hamburger. How often does that lead you to a gastropub? But I digress.

When I reply to people I usually hope they find me boring, but I still hope for them throw me a like every once in a while. I think what I really want  is for someone who gets tons of attention to say, yknow, he’s not the one for me, but that guy’s alright, sometimes.

It seems there's a regression to the mean when it comes to interior design, not only of our cafe and restaurant spaces, but also Airbnbs. The mean is seen as this "basic, most likely to cause bookings" kind of design. Problem is it lacks charm and personality. When we put those two things back in, we  cater less to the masses and more to specific cohorts of customers. That might change the outlook on loyalty as well. (87 words)

This did not sound right, my research (on Feb 11, 2024) shows:

Five companies own 76 resorts in North America: Vail (38), Alterra (17), Boyne (9), POWDR (9), Aspen SkiCo (3). Only 36 of these are in the top 100 of size (measured in skiable acres), Vail has only 12 of these 36.
At least half of Vail owned resorts are small operations in the midwest and mid-Atlantic : Ohio, Michigan, Pennsylvania, Illinois, Minnesota, Missouri, Indiana, Wisconsin.

I do not disagree with the basic premises of your article. I have skied in France, Italy, and Austria and plan to return. Yes, overall it is less expensive (especially for the casual skier), and offers more choices and opportunties for spontaniety. 

The detailed explanation of multiple ownership of infrastructure in Austria was insightful. There was no mention of government subsidies. Are present in Austria and how much impact do they have?

I do question your characterization of Vail as a near monopoly. There are approximately 800 ski resorts in North America, Vail owns 36 as mentioned previously and only 12 are in the top 100 of the largest resorts.

And of course you included pictures of the crazy lift lines. I have skied in the North American west for 40 years, I can assure you that those are aberrations. I have also been in several chaotic Euro cable car scrums, at least we show some respect to others while we wait for a lift. (268 words)
